Scarpato – First place

A story that began at the end of the 19th century, in 1888, and made the Veronese pastry tradition its own, starting with the great leavened products: pandoro, panettone, colomba, focaccia. Produced by slow rising and long processing, and selected raw materials. The result? A podium product. It was he who convinced the panel of tasters. A low, dark hazelnut-coloured panettone with a burnished top cut into four. Inside, the structure is pale, with a slight biscuity at the base. The crumb has small, elongated alveoli, and a tightly packed eye that encloses the fruit: sultanas of medium carat and good consistency, candied fruit (Sicilian orange peel and Diamante citron peel) which is acidic and large. The nose is very correct, fresh, with the prevalence of milk aromas, and then hints of butter and fruit – the same ones that also return on tasting – a very composed and clean aromatic array. Soft, sweet, chewy. For us, it makes the podium.
