The dough is not overly intense yellow in color and has a homogeneous alveolation, enriched by well-distributed raisins. On the surface, a compact and crispy glaze delicately releases the almond and amaretto aromas on tasting accompanied by the softness of the raisins, resulting in a perfectly balanced panettone that does not weigh down the palate.
