Scarpato, great leavened goods in a workmanlike manner

Historicalrecipes, vegan line and novelties: the historic Veronese family business is approaching the forthcoming festivities Christmas with a line of 12 handcrafted panettone cakes and more than 33 different recipes.

The history of Pasticceria Scarpato is more than a century old and combines the quality of ingredients to the expertise of master pastry chefs who, thanks to their skilful hands, are always searching for the perfect cake. The Veronese company – owned by the Ferraresefamily since 1995 – through daily and painstaking work, always arrives at the winterholidays with novelties that, year after year, never cease to surprise the loyal gourmet clientele.

In occasione del Natale 2023 la pasticceria ha ideato 12 tipologie di grandi lievitati che si esprimono attraverso più di 33 ricette diverse, rigorosamente prodotti nel laboratorio interno a cui si affianca anche il reparto della cremeria aziendale dove vengono prodotte tutte le farciture homemade che trovano un originale impiego nella linea “Gourmet” con canditi di arancia di Sicilia, miele italiano, vaniglia Bourbon e da una copertura di croccante glassa all’amaretto, zucchero in granella e mandorle d’Avola. Ad arricchire la preparazione del lievitato c’è inoltre un fattore determinante: il tempo. Il segreto di queste preparazioni risiede in una lunga lievitazione di 72 ore a cui segue un prezioso riposo, passaggi che contribuiscono alla morbidezza e alla fragranza dei panettoni Scarpato.

New flavours worth tasting include the version with cranberries and chocolate white chocolate from the Excellencecollection or BlackForest with sour cherries, chocolate drops and cream . Also not to be forgotten is the section where soft doughs and the world of spirits meet: it is clear that a Veneto doc must try their Panettone grappa and Amarone barrique at least once in a lifetime. Alongside the classic line, the brand has also perfected a series of vegandesserts such as the naturally leavened Vegan Christmascake, with brown sugar, oat fibre, soya protein and sultanas.

The Scarpato confectionery has also become famous for its exploitation of the most identifiable dessert in the Veronese tradition, namely theoffella – those who participated in the Modena Champagne Experience were able to test its savoury potential on that occasion -, will also be the protagonist of numerous festivals dedicated to fans of great festive leavened products. The next appointment to try some? Re panettone in Milan , where their Nadal, the exclusive panettone created with the original recipe found among the company’s historical recipe books, composed of butter, honey from the Lessini Mountains and a topping of sultanas soaked in Recioto.
